We focus on small producers, building relationships with them, experimenting with wild edibles and forgotten ingredients. Injecting modern gastronomic philosophy into the culinary landscape, we spend time rediscovering old culinary traditions, all the while creating new ones.
Most importantly we are focused on driving the culinary culture of our region forward through collaboration.
